Founded in 2021 by Conor Sheridan, the company offers a centralized system that integrates business intelligence, inventory management, workforce management, and payroll. The inspiration for Nory came directly from its founder's own experiences. Conor Sheridan, who previously worked in finance and quantitative trading, co-founded the fast-casual restaurant chain Mad Egg in 2018. While scaling Mad Egg, he encountered firsthand the difficulties of using fragmented management systems and desired a data-centric solution to improve performance. This experience led him to create Nory, an operating system purpose-built for the challenges of the hospitality industry. Based in Dublin and London, the company operates on a subscription-based business model, offering tiered options for different restaurant sizes.

Nory has secured significant funding to fuel its growth and technological development. The company raised a $16 million Series A round in 2024, followed by a $37 million Series B in September 2025, bringing its total funding to over $62 million. These funds are allocated towards enhancing the platform's AI capabilities, including hiring data scientists and deploying autonomous AI assistants, as well as accelerating its expansion into the US market. The platform claims its AI can forecast daily demand with up to 95% accuracy and save over 100 hours of administrative work per site each month.
